I made some more vegan cookies y’all! The original recipe from Ambitious Kitchen wasn’t completely vegan, however. It calls for one egg, but I did some investigating and found that one tablespoon of flax seed along with three tablespoons of water is a suitable replacement for one egg when you’re baking! It worked perfectly, in my opinion!
Anyway, these cookies were delicious. I’ve made them twice so far – once for a party and again for a science research class I’m taking. Nobody even knew they were vegan! I’m definitely making these cookies again. They taste the best when they’re a little undercooked btw!
